Banana Chocolate Chip Muffins

In my process of becoming gluten free, I’ve been looking for good breakfast alternatives. I found this recipe on Pinterest and gave it a try today. They came out great. I couldn’t wait to try one. And it was delicious!

Makes 12 Muffins

Ingredients

  • 2 cups old fashioned oats
  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup plain Greek yogurt
  • 3 tbsp honey
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 375 degrees. In your blender or mixer, mix together all ingredients except for the chocolate chips. Once blended, stir in chocolate chips.
  2. Pour batter into 12-cup muffin pan lined with paper cups. Bake for 15 minutes until tops are puffed and golden brown and a toothpick inserted in the centre comes out clean.
